“Dhania Panjiri” is not only a popular dish during various North Indian festivals but also holds significance in Maharashtra, where it is prepared as Prasad on the occasion of Chhatrapati Shivaji Jayanti. This festival celebrates the birth anniversary of Chhatrapati Shivaji Maharaj, The aromatic and nutritious blend of powdered coriander seeds and dry fruits.
It is a traditional Indian sweets which is especially popular in Northern India during religious festivities like Janmashtami and the winter festival of Lohri. It is both nutritious and flavourful. Coriander seeds are known for their health benefits, including aiding digestion and providing essential vitamins and minerals.
Ingredients:
- Whole Coriander : 1/2 cup
- Ghee (Clarified Butter): 4-5 teaspoon
- Makhane (Fox Nut): 1/2 cup
- Chironji/ Charlie (Buchanania lanzan): 2 tablespoon.
- Almond: 2 tablespoon
- Mishri/ Mishree (Rock Sugar/ Candy Sugar): 2-3 tablespoon.
- Melon seed: 3 tablespoon
- Cashew Nut: 12-15 no.
- Walnut: 3-4 no.
- Raisin: 2 tablespoon
- Coconut (Grated Dry Coconut): 3 tablespoon
- Cardamom Powder: 1/2 teaspoon
- Tulsi Leaves (Indian Basil): 5 leaves.
Preparation:
- Heat 1 teaspoon ghee in a fry pan, add whole coriander seeds, stir fry on medium low flame for 2-3 minutes, take out, keep aside.
- Add 1 teaspoon of ghee into the same pan stir fry Makhane on medium low flame for 2-3 minutes, take out, keep aside.
- Stir fry coconut and other dry fruits in same manner until golden colour appears.
Method:
- Grind Mishree, keep aside.
- Grind fried Coriander seeds, Makhane and half quantity of all dry fruits separately, keep aside.
- Remains half dry fruits to be used directly in prepared panjiri.
- In a mixing bowl add ground coriander, makhane, dry fruits and mishree powder, mix well.
- Add remaining dry fruits and green cardamom powder.
- Transfer it to pooja plate and Garnish with Tulsi leaves.
