Recreating the Phalahari Drink with “Tapioca Pearl and Avocado” I first tasted in San Francisco in a Korean restaurants. It is a popular Korean drink available in every Korean restaurant in California.

The recipe not only allows me to relive those moments but also to share a piece of my journey with you viewers.

It’s wonderful how food and drinks can transport us back to special places and times, turning a simple meal into a storytelling session and a cultural exchange.

The drink is a refreshing and nutritious that fits perfectly within the dietary restrictions of Hindu fasting rituals.

This drink combines the creamy texture of avocado with the playful chewiness of tapioca pearls, creating not only delightful appearance but amazing drink for fasting days.

Avocado, rich in healthy fats and vitamins, offers a smooth, buttery consistency that pairs beautifully with the slightly sweet and gelatinous tapioca pearls.

Served chilled or at room temperature, this Phalahari drink is a luxurious treat. So lets starts with boiling tapioca pearl…

Ingredients:

  • Avocado: 1 no.
  • Tapioca pearl (sago/ sabudana): 1/4 cup
  • Condence Milk: 200 ml.
  • Vanila essence: 1 teaspoon (optional)
  • Ice cube: as per your choice.
  • Chia Seed: 1 tablespoon
  • Milk (cold): 1 cup (optional)

Preparation:

  1. Soak chia seed with 10 tablespoons of water for minimum 1/2 an hour, keep aside.

Make Avocado puree:

  1. Cut the avocado into two halves: discard the seed, scoop out the pulp  of half avocado with help of spoon, put the pulp into blending jar and blend it till fine paste. Keep aside.
  2. Finely chop remaining half avocado, keep aside.

Boiling Sago:

  1. Bring water to boil, add sago, cook  on medium flame until translucent ( about 8-10 minutes).
  2. Drain Sago: using fine mesh strainer, drain and rinse sago, keep aside.

Assembling the drink:

  1. Add 2 tablespoon of avocado puree in/to tall glass, add sago and chopped avocado.
  2. Add ice cubes, chia seed and 2-3 tablespoon of condensed milk.
  3. Top with cold milk/water as per your choice. Give a good stir and enjoy the sweet treat (drink)/ bubble with broad straw and spoon for the sago and avocado chunks.
  4. Note: you can prepare this sweet treat with seasonal fruits like Mango and Strawberry too.
