“Mix Veg Jalfrezi” originating from the fusion of north Indian and Bangla cooking styles during the colonial era (British empire ruled over Indian sub continent).
“Jalfrezi” literally means “hot-fry,” referring to the quick cooking method used to preserve the crunch and freshness of the vegetables.
It is a vibrant and flavourful Indian stir-fry dish made with a medley of colourful and exotic vegetables.
In the dish typically includes bell peppers, carrots, beans, cauliflower, cabbage, baby corn, broccoli, mushrooms and onion, all cooked with aromatic spices like cumin, turmeric, and garam masala.
The result is a semi-dry sabji that is both visually appealing and packed with bold flavours. It is often served with Roti, Naan, or Fried Rice.
Mix Veg Jalfrezi is a delicious and wholesome choice for everyday meals or festive occasions.
The word “jalfrezi” is derived from the Bangla term jhal porhezi, where jhal means spicy and porhezi refers to a suitable diet or dish.
This vegetarian version of mix Veg Jalfrezi is popular, across North India, using seasonal vegetables and paneer.
Ingredients:
- Cabbage: 100 gm
- Button Mushroom : 6-8 no.
- Capsicum: 1no. (Medium)
- Peas: 100 gm.
- Cauliflower: 100 gm.
- Beans: 100 gm.
- Paneer (Cottage Cheese): 100 gm.
- Onion: 2no. (Medium)
- Tomato: 2 no. (optional)
- Green chilies: 2-3 no.
- Ginger: 1 teaspoon (finely chopped)
- Butter: 100 gm.
- Olive oil/Cooking oil: 4-5 tablespoon
- Salt: 1 teaspoon (as per taste)
- Turmeric powder: 1/2 teaspoon
- Coriander powder: 1 tablespoon
- Chilli powder: 1 teaspoon
- Cumin: 1 teaspoon
- Fresh cream: 2-3 tablespoon
Preparation:
- Chop and dice cabbage. Keep aside.
- Peel off Mushroom and dice it. Keep aside.
- Chop and dice capsicum. Keep aside.
- Chop Cauliflowers into medium floret. Keep aside.
- Chop beans into 1” length, Keep aside.
- Chop and dice Paneer. Keep aside.
- Finely chop green chilli, tomato, onion and ginger, Keep aside.
Method:
- Take fry pan, heat oil, let oil start to smoke; add cumin, sputter for few seconds.
- Add onion, green chilies and ginger; stir-fry for couple of minutes.
- Add cauliflower; stir-fry for couple of minutes on high flame.
- Add beans; continue to fry for couple of minutes on medium flame.
- Add Mushrooms; continue to stir and fry for couple of minutes.
- Add cabbage ( save small quantity for later use) and stir-fry for couple of minutes on high flame.
- Add salt, turmeric, coriander, chilli powder and capsicum, stir-fry for couple of minutes on high flame.
- Add fresh cream and Paneer; continue to stir-fry for couple of minutes on high flame.
- Add garam masala powder and add cabbage (saved) for more crunchiness, cook for a minute, put off the flame.
- “Mix Veg Jalfrezi” is ready for dinner along with Naan or Tandoori Roti.
