I served this with Aromatic Pulao, creating lunch meal. The delicate fragrance of basmati rice, gently infused with whole spices, perfectly complements the creamy richness of the gravy. Ingredients:

  • Baby Corn: 150 gm.
  • Paneer: 150 gm
  • Onion: 1 no (small)
  • Tomato: 1 no (small)
  • Green chilli: 3-4 no.
  • Ginger: 1” pieces
  • Salt: 1 teaspoon
  • Whole Garam masala : (green cardamom: 1-2, black cardamom: 1, cumin: 1/4 tespoon, black pepper: 8-10 no. clove: 3-4 no. cinnamon: 1” piece)
  • Khoa: 2 tablespoon
  • Cashew nuts: 10-12 no.
  • Malai/Fresh cream: 2 tablespoon
  • Ghee/Cooking oil: 5-6 tablespoon
  • Bay leaf: 1 no

Preparation:

  1. Chop baby corn into small pieces/as per your choice, keep aside.
  2. Soak cashewnut for an hour, grind to smooth paste, keep aside.
  3. Chop onion, tomato, ginger roughly, grind into smooth paste. Keep aside.
  4. Cut paneer in pieces, size as per your choice, Keep aside.
  5. Slit green chilli longitudinally, discard the seeds. Keep aside.

Method:

  1. Heat 2 tablespoon of ghee in a fry pan; add chopped baby corn, stir fry on medium flame for  2-3 minutes or until it appears golden.
  2. Add paneer; continue to fry for couple of minutes, take out fried baby corn and paneer, keep aside.
  3. Add remaining  ghee; add whole garam masala and bay leaf, sputter for few seconds.
  4. Add prepared onion, tomato and ginger paste, stir fry on medium flame for 2-3 minutes.
  5. Add khoa; continue to fry on low flame about 3-4 minutes.
  6. Add cashew nut paste continue to fry further for couple of minutes (keep stirring otherwise it sticks on the bottom).
  7. Add fresh cream; continue cooking on low flame for 3-4 minutes or until oil separates from masala.
  8. Add slowly 1 cup of  hot water; boil the gravy for a minute.
  9. Add fried baby corn, paneer and green chilli, cook for couple of minutes.
  10. “Baby Corn Paneer Royal Delight”  is ready; take out in serving plate and serve.
