Bitter gourd is very good for health.It can help manage diabetes, it control blood sugar level too.This dish is flavourful and wonderful.
Ingredients:
- Karela (bitter gourd): 250 gm
- Onion: 4 no. (Medium)
- Tomato: no. (Medium)
- Ginger: 1 inch piece
- Garlic: 4 flakes (big size)
- Aniseed powder: 1 teaspoon
- Chilli powder: half teaspoon
- Turmeric powder: half teaspoon
- Coriander powder: 4 tablespoon
- Garam masala powder: half teaspoon
- Sugar: 2 teaspoon (optional)
- mustard oil: 100 ml
- Salt: 2 teaspoon
Preparation:
- Trim the both ends of karela, and carefully make slit on one side (Lengthwise); take out all seeds, keep aside.
- Grind onion, tomato, garlic and ginger together up to fine paste, keep aside.
- Heat oil in a nonstick fry pan; when smoke comes, add karela, stir fry on high flame until done, (About 5-7 minutes). Keep aside.
Method:
Stuffing masala:
- In a heavy bottom pan heat 5 tablespoon oil; add aniseed, sputter for few seconds add ground paste. Fry till the paste dries up and become golden brown colour. (About 5-10 minutes depending upon the quantity.)
- Add chili powder, coriander powder, turmeric powder, and 2 teaspoon sugar and aniseed powder, continue to fry for couple of minutes, add Garam masala powder. Keep aside to cool.
- Stuff this masala into the fried karela with the help of spoon.
- Stuff karela is ready to be served.
