‘Masala’ simply means spice; no Indian can live without masala in their lives. French beans are easily available in all over…it is rich in vitamins and have numerous health benefits.
The preparation packed with bags of flavour with onion, tomato, garlic, ginger and spices from south India makes the dish yummy.
Ingredients:
- French beans: 250 gm
- Onion: 1 no. (Medium size)
- Ginger: 2” pieces
- Garlic: 3-4 flacks
- Tomato: 2 no. (Medium size)
- Cumin: ½ teaspoon
- Bay leaf: 2 no.
- Black pepper: 10-15 grains
- Cinnamon: 1 inch piece
- Black cardamom: 1 no. (Crushed)
- Turmeric powder: 1 teaspoon
- Chilli powder: ½ teaspoon
- Coriander powder: 1 teaspoon
- Salt: 1 teaspoon (as per taste)
- Cooking oil: 2 tablespoon
- Curd: 2 tablespoon
- Garam masala powder: 2 pinch
Preparation:
- Cut French beans into 1 inch pieces. Steam/blanch the beans, keep aside.
- Cut onion, green chilli, tomatoes, ginger and garlic into small pieces.
Method:
- Take a fry pan. Heat oil till it smokes. Put cardamom, cinnamon, bay leaf, cumin, sputter it for few seconds, and add chopped onion, green chilli. Stir fry for couple of minutes or till onion become transparent, add tomatoes, ginger and garlic continue ti fry for 2-3 minutes or till it is done. Lower the flame; add curd, continue fry for couple of minutes or till oil separates from the masala.
- Add boiled beans and fry for 2 minutes, add salt, turmeric powder, coriander powder, chilli power and ¼ cup of water cover it and cook about 3-4 minutes or till it get done and liquid dries up.
- Put off the flame, transfer into serving bowl. Decorate with green coriander. French beans masala is ready to serve.
