Ingredients:
- Banana flower: 1 no. (medium size).
- Fresh coconut: one forth
- Split black gram: 1 tablespoon
- Split Bengal gram: 1 tablespoon
- Green chilli: 2-3 no.
- Red chilli: 2 no.
- Mustard seeds: half teaspoon
- Curry leaves: 8-10 leaves
- Salt: 1 teaspoon
- Refined oil: 2 tablespoon
- Tamarind pulp: 1 teaspoon
Preparation:
- Remove outer red layer of banana flower.
- Remove outer layer of banana till green layer comes.
- Keep bunch of flower aside.
- Remove hard stem from each flower. Cut each bunch in very fine pieces.
- Put all cuttings into a bowl filled with water (otherwise it will turn dark brown as it contains lot of iron) Keep aside.
- Scrap the coconut and keep aside.
- Chop green chilies and onion into small pieces. Chop ginger into small pieces/Julian.
- Chop red chilli too.
Method:
- Cook and boil this banana flower till it become soft. (We can do it in the cooker or microwave)
- Strain water with the help of strainer. Keep aside.
- Take a wok, heat oil, Put mustard seeds, when it sputters, add red chilli, split black gram; stir fry until it turns golden brown in colour.
- Add ginger and green chilli, fry for 1 minute; add onion and curry leaves, stir fry for 1-2 minutes.
- Add boiled banana flower, stir fry and cover it, cook on low flame until half done. (About 2-3 minutes)
- Add chilli powder, coriander powder, turmeric powder and salt; lower the flame and Fry till vegetables are done. (About 4-5 minutes).
- Add tamarind pulp and fresh scrapped coconut; stir fry for 1-2 minutes.
- Put off the flame, take out into serving bowl.
