Delicious and authentic recipe from Bihar: The “Chaulai Saag” recipe comes with rich and vibrant green colour, nice aroma and smoked flavor, when it infused with whole red chilli and garlic. And we know green leafy vegetables are rich in nutrients, high in fiber and low in calories.
Ingredients:
- Chaulai(amaranth): 1 bunch (250 gm)
- Onion: 1 no. (Small)
- Garlic: 2 flakes
- Oil: 2 table spoon
- Salt: half teaspoon (as per taste)
- Mustard seed: 1 teaspoon
- Red chilli: 1-2 no.
Preparation:
- Clean, wash and Chop chaulai leaf roughly. Keep aside.
- Chop onion and garlic into small pieces. Keep aside.
- Chop red chilli into 2-3 pieces. Keep aside.
Method:
- Heat oil in a heavy bottom pan, when it smokes add mustard seeds and red chilli; sputters for few seconds, add onion, garlic, stir fry for couple of minutes or until it becomes translucent(keep it stirring otherwise it may burn). Add chaulai leaf, continue to fry for about 3-4 minutes.
- It will change the colour and starts shrinking; put half cup of water, cook for 8-10 minutes on medium lower heat, add salt, cook and mash with masher till it is done.
- Put off the flame, now, “Chaulai ka sukha saag” is ready to be served with any type of meal.
