This year for my son’s birthday, I decided to prepare a special, protein-rich snacks that would be both delicious and nutritious. The choice was “Royal Kothimbir Chi Vadi (Green coriander-Paneer Snacks)” fit for birthday celebration, where both taste and health were prioritised. Everyone enjoyed the flavourful snacks, and it was a wonderful way to incorporate healthy eating into a joyous celebration.
Kothimbir Vadi I have already uploaded, typically made with fresh coriander (cilantro) and chickpea flour, but in today’s recipe I elevated the classic recipe by adding paneer and a crunchy assortment of nuts, which not only enhanced the texture but also made a delightful royal version.
Perfect for special occasion; the dish marries the freshness of coriander with the creamy texture of paneer and the flavour of mixed nuts. It is a luxurious snacks out of traditional Maharashtrian snacks.
Ingredient:
- Green Fresh coriander leaves ( finely chopped): 2 cups.
- Besan (gram flour): 1 cup..
- Paneer: 100 gm.
- Rice Flour: 1 tablespoons.
- Ginger: 1” piece.
- Green Chilli; 1-2 optional
- Salt: 1 teaspoon (as per taste)
- Coriander Powder: 1/2 teaspoon
- Roasted Nuts (Almond, Cashew Nut, Peanut etc): 1/4 cup (course powder)
- Sesame Seed: 2 tablespoon
- Asafoetida: 2 pinch
- Baking soda: 1 pinch (optional)
- Oil: 1 tablespoon for adding into dough
- Cooking oil/ Sesame oil: for deep frying
Preparation:
- Grease the cake container/tray, keep aside.
- Grate paneer, keep aside.
- Finely chop, ginger and green chilli. Keep aside.
- In a big mixing bowl; put all ingredients except sesame seed, prepare dough adding water in small quantity, (like Roti-dough).
- Divide the prepared dough into 3-4 portions. Roll each portion as cylinder.
- Roll sesame seed all around, keep aside.
Method:
- Place the container in rice cooker or pressure cooker/steamer.
- Cook for 10-12 minutes. Remove the tray from rice cooker and let it cool for 10-15 minutes or to room temperature.
- Cut the roll into about 1/2” slices.
- “Royal Kothimbir Chi Vadi/wadi (Green coriander-Paneer Snacks) ” is ready for deep frying.
- You may eat as it is, if you want to eat fat free.
- Deep fry/shallow fry:
- Heat oil in a frypan; deep fry till it becomes golden brown on both sides or you can shallow fry it also.
- Ready to be served on the special occasion.
Note:
- you may prepare it in advance and store in refrigerator or freezer as per your requirements.
