The choice was “Royal Kothimbir Chi Vadi (Green coriander-Paneer Snacks)” fit for birthday celebration, where both taste and health were prioritised. Everyone enjoyed the flavourful snacks, and it was a wonderful way to incorporate healthy eating into a joyous celebration.

Kothimbir Vadi I have already uploaded, typically made with fresh coriander (cilantro) and chickpea flour, but in today’s recipe I elevated the classic recipe by adding paneer and a crunchy assortment of nuts, which not only enhanced the texture but also made a delightful royal version.

Perfect for special occasion; the dish marries the freshness of coriander with the creamy texture of paneer and the flavour of mixed nuts. It is a luxurious snacks out of traditional Maharashtrian snacks.
