Jodhpuri mirchi vada (Green chilli pakora)

This popular snack brings warmth and a burst of flavour, making it the perfect companion for the monsoon weather. It is popular and beloved street food from the vibrant city of Jodhpur in Rajasthan, India.

Preparing Mirchi Vada on these days has become a desirable tradition for me, the home with the tantalizing aroma of spiced potato-stuffed chilies, dipped in gram flour batter and fried to a golden perfection. The contrast of the crunchy exterior with the soft, flavourful filling. we often Enjoyed with a hot cup of tea and a tangy Tamarind Chutney in my balcony.

We love the authentic taste of Rajasthani food as DaalBaati-Churma, Gatte ki Sabji, Gatte ki Kadhi, Kachori, Mawa Kachori, Jaselmeri Chana, etc.

Ingredients:

  • Big Green chilli: 4 no.
  • Potato: 2 no. (Medium size)
  • Onion: half (small size)
  • Mustard oil /cooking oil: for frying
  • Ginger: 1”piece
  • Garlic: 2-3 flacks
  • Coriander leaves: 2 tablespoon (chopped)
  • Cumin seed: half teaspoon
  • Salt: half teaspoon
  • Jaljeera powder: 1 teaspoon
  • Ajwain (carom seeds): half teaspoon
  • Kalongi (onion seed): ¼ spoons
  • Besan (gram flour): half cup
  • Water: half cup
  • Meetha soda (Soda bicarb): 1 pinch

Preparation:

  1. Take capsicum, discard stem and seed, slit longitudinally.
  2. Boil and mash potatoes.
  3. Chop garlic, green chilli and ginger into very small pieces.
  4. Take a bowl. Put Besan, salt, and Meetha soda in it; make a smooth batter with the help of water, keep aside.

Method:

To prepare stuffing:

  1. Heat oil  in a fry pan; when it starts to smoke add cumin seeds, sputter for few seconds, add onion, garlic, green chilli and ginger in it. Stir fry (keep it stirring otherwise it may burn).
  2. Add mashed potato continue to fry(About 2-3 minutes); add Coriander powder, turmeric powder, jaljeera powder and salt, continue to fry on lower flame for couple of minutes.
  3. Now stuffing is ready, keep aside.

To prepare stuffed chili:

  1. Take split chilli and stuff fully with stuffing. Keep aside.

Dip fries the pakoda:

  1. Heat oil in a heavy bottom pan, let oil to smoke; pour a drop of batter into the oil, if batter comes up, it means right temperature of oil otherwise wait for a while and test again.
  2. After getting right temperature of oil, Dip stuffed chilli into batter. (Either direct by hand or spoon); deep fry all stuffed chilli, till golden brown(about 3-4 minutes). Serve  piping hot with  Green Chutney or tomato sauce.
