Ingredients:
- Sama rice: 50 gm
- Ghee: 5gm (1teaspoon)
- Milk: 1 liter
- Sugar: 100gm (2 serving spoon)
- Green cardamom powder: 1teaspoon
- Almond: 12-15 no.
- Cashew nut: 50 gm
- Dry grapes: 20-50 gm.
Preparation:
- Clean and wash rice. Keep aside in a sieve.
Method:
- Heat 1 teaspoon of ghee in a wok.
- Add washed rice and fry for 3-5 minutes.
- The moment some of rice begins to change color, add milk and Stir.
- Cook it on lower flame.
- Continue it into 30-35 minutes. Stir it every 5 minutes.
- When rice is done and become soft.
- Add sugar, green cardamom powder, almond and cashew nut.
- Cook for another 4-5 minutes, so that all flavor get mixed together and proper consistency come.
- Put off the flame.
- Let it be cool, then add dry grapes (kismis) ,
- Serve it into serving bowl.
- Keep it into refrigerator for an hour or two.
- Now, cold Sama rice kheer is ready to serve.
- Sama rice is commonly known as “varat ka Chawal”.
- It is highly nutritious and easy to digest.
- This has been eaten during religious fasting.
- In some community of India, it is a part of staple food.
