Arabi (taro root) curry masala

Ingredients:

Preparation:

  1. Chop onion. Keep aside.
  2. Scrape arabi using a knife and cut into small cubes.

Method:

  1. Take fry pan, put oil, when it smokes add ajawine.
  2. Add chopped onion and fry till color becomes golden brown. (About 2-3 minutes)
  3. Add garlic and ginger paste in it. Stir it and fry (keep it stirring otherwise it may burn).
  4. Now put arabi and stair it. Cover the fry pan. Lower the flame.
  5.  Cook on minimum flame until arabi become soft.
  6. Now in a bowl put the chili powder, coriander powder, turmeric powder and salt, add one tablespoon of water and mix it well, till it becomes paste.
  7. Add this paste in the fried arabi till it starts releasing oil.
  8. Add one cup of hot water, mix this and cover it, when it comes to boiling lower the flame, cook till arabi is done.
  9. Add mango powder too.
  10. Let it cook for desired constancy.
  11. Add Garam masala powder, put off the flame.
