Parwal (Pointed Gourd) is prepared various ways in north Indian kitchen, either alone or combination with potatoes. For example “Stir fries”, “Mashed Pointed Gourd”, as a side dish or “Stuffed Pointed Gourd Masala” and Curry dish as a main course.
This is not only used for veggie dishes, it is also used to prepared delicious Sweets as a desserts.
Today’s recipe is “Stuffed Pointed Gourd”; the stuffing blend with onion 🧅, tomato 🍅,and some spices, which is easily available in our kitchen pantry, which gives delectable taste. Make sure you serve it with “Steamed Rice” and “Dal”.
This is very good for lunch boxes and goes very well with any Indian bread like simple Paratha, Pumpkin Paratha, “Bitter Gourd leaf Paratha”…
Let’s start the recipe “Bharwan Parwal (Stuffed Pointed Gourd)”…
Ingredients:
- parwal (pointed gourd): 250 gm
- Onion: 4 no. (Medium)
- Ginger paste: half teaspoon
- Cumin seed: half teaspoon
- Chilli powder: one teaspoon
- Turmeric powder: half teaspoon
- Coriander powder: half teaspoon
- Garam masala powder: half teaspoon
- Mustard Oil/any cooking oil: 4 tablespoon
- Salt: one and half teaspoon (as per taste)
Preparation:
- Wash and Trim the both ends of pointed gourd, and slit it from one side.
- Take out all the pulp of Parwal.
- Chop onion into very fine pieces.
Method: For stuffing:
- Heat 4 tablespoon of oil in a fry pan; add cumin seed, sputter for few seconds, add chopped onion, stir fry on high flame until onion gets transparent(About 3-4 minutes).
- Add chilli powder, coriander powder, turmeric powder and salt and ginger paste; continue to fry couple of minutes on medium flame or till onion become light brown in colour, add Garam masala powder. Filling is ready, keep aside.
Method:
- Stuff this filling into Parwal with the help of spoon.
- Pour 2 tablespoon of oil in the fry pan; when smoke starts , arrange stuffed Parwal such that you can turn the side of Parwal one by one and saute on low flame with lid on(about 2-3 minutes).
- Change the side of Parwal, continue to cook for couple of minutes or till both side of Parwal starts browning, it is done.
- Serve with roti, paratha or as a side dish.
