“Bread poha (veg)” is a quick and flavorful twist on the traditional poha, made using bread pieces instead of flattened rice. This soft and light version of Bread Poha, prepared by soaking bread in buttermilk and gently squeezing it before cooking, makes a wholesome and easily digestible meal for babies.

The buttermilk not only gives a mild tangy flavor but also keeps the dish cooling and gut-friendly. In fact, my friend’s daughter loved it so much that she requested me to share the recipe for her baby. It’s a simple, homely preparation that turns everyday bread into a nutritious and comforting meal for young children.

It is one of the easiest ways to transform bread/leftover bread into a fresh, hearty breakfast or evening snack. Light yet filling, this vegetarian recipe balances nutrition with taste and is loved for its versatility; you can keep it simple or enrich it with a variety of vegetables. Ingredients:

  • Bread: 4 slice
  • Cauliflower: 50 gm
  • Peas: 50 gm (fresh/frozen)
  • Onion: 2 no. (Medium size)
  • Tomato: 1 no.
  • Green chilly: 1 no.
  • Boiled potato: 2 no. (Medium size)
  • Coriander leaves: 50 gm
  • Ground nut: 50 gm
  • Salt: 1 teaspoon
  • Black salt: half teaspoon
  • Chilli powder: half teaspoon
  • Turmeric powder: 1 teaspoon
  • Mustard seed: 1 teaspoon
  • Curry leaves: 1-2 twigs
  • Butter milk: 1 cup
  • Oil: 2 tablespoon
  • Lime juice: half Lemon

Preparation:

  1. Chop cauliflower and tomato into small pieces. Keep aside.
  2. Chop potato, onion, green chilli and coriander leaves, keep aside.
  3. Soak bread with butter milk, Squeeze between palms break this soaked bread into uneven pieces and keep aside

Method:

  1. Heat a fry pan with 1 teaspoon oil.
  2. Fry groundnut for 3-5 minutes. Stir continuously till brown colour comes. Keep aside.
  3. Add rest oil in the pan. Sputter mustard seed, add cauliflower; stir fry  on medium flame for couple of minutes or till cauliflower is half done.
  4. Add onion, green chili, curry leaves and peas and fry on medium low flame for about 3-4 minutes or till all vegetables are done, add tomato and boiled potatoes.
  5. Stir it properly, and cover it for  couple of minutes.
  6. Open the cover, stir it and add salt, turmeric powder, coriander powder and chilli powder, just stir it.
  7. Add soaked bread pieces, stir properly and cover for 2-3 minutes, put off the flame.
  8. Add lemon juice and coriander leaves. Decorate with fried ground nut.
  9.  Serve hot with juice or milk .
