Carrot Cake

We all love to eat cake, delicious “Carrot Cake” is ultimate healthy and tasty for your family; originated in England during World War II in 1943. Today, it is one of the most popular American desserts. Carrot cake’s popularity increased in the 1980s due to healthier than other cakes where no vegetables  are used. The yummiest way to eat cake without guilt and stay fit.

Carrot supports your  immune system and are a good source of fibre as well, which help to maintain digestive health.

Ingredients:

  • Maida: 1 cup.
  • Carrot:1 no.(medium size)
  • Curd: 1/2 cup.
  • Baking soda: 1/2 teaspoon.
  • Baking powder: 1 teaspoon.
  • Cinnamon Powder: 1/2 teaspoon.
  • Salt: 1 pinch
  • Oil/ghee: 1/4 cup
  • Vanilla essence: 1/2 teaspoon
  • Sugar: 1/2 cup
  • Ghee: 1 teaspoon
  • Milk: 5 tablespoon
  • Baking Paper:

Preparation:

  1. Peel and grate carrot, Keep aside.
  2. Sieve Maida, baking soda, baking powder and salt together (sieve 3-4 times). keep aside.
  3. Grind sugar to make powder. Keep aside.
  4. Take a baking tray, put half teaspoon of ghee, and apply ghee all around the container. Place baking paper at the bottom of container. Keep aside.
  5. Take a big mixing bowl, put curd, powdered sugar and oil; Mix it well with the help of hand blender/food processor. (About 2-3 minutes).
  6. Add sieved mixture of Maida, baking soda, baking powder, salt and cinnamon powder.
  7. Mix well, if needed add little amount of milk to make the batter of desired consistency.
  8. Add  grated carrot into the batter, mix well.
  9. Add vanilla essence, cake batter is ready.

Method:

  1. Choose the size of baking tray such that when batter is put into it, it gets half filled only, as after baking its volume gets nearly doubled.
  2. Now bake it into preheated oven/OTG at 170-180 degree centigrade for about 20-25 minutes.
  3. Bake until toothpick inserted near the centre of the cake comes out clean.
  4. If it sticks, bake further few minutes.
  5. Let it cool; cut the cake into pieces after cooling.
  6. Yum-yum-yummy cake is ready to serve.

Note:

  1. You can bake it simply into pre heated cooker on minimum flame.
  2. Let it cool for some time and transfer into serving disc.
