I always try to prepare easy to make recipe in my kitchen but don’t compromise on the health point of view. Adding potato in the recipe not only gives rich flavour but it contains vitamin B6, Carbohydrates and fibre. It means it is a nutritional punch for our body.

Today I am going to upload a fantastic recipe “Gilki(Sponge Gourd) with Potatoes “
The recipe I often serve light wholesome dinner option. Cutting in round shape of gilki and potatoes not only appealing, but have a great taste too.
Ingredients:
- Potato: 100 gm.
- Gilki(Sponge Gourd): 500gm
- Onion: 1 in number. (Medium)
- Red chili powder: 1 teaspoon
- Turmeric powder: 1 teaspoon
- coriander powder: 1 teaspoon
- Garam masala powder: half teaspoon(optional)
- Cumin seed: half teaspoon
- Salt: 2 teaspoon
- Mustard oil/any cooking oil: 50 ml.
- Water: 1/2 cup (if required)
Preparation:
- Chop onion. Keep aside.
- Peel off potatoes by pillar and cut into round shape, keep aside.
- Peel out Gilki(Sponge Gourd) remove both ends, cut into round pieces, keep aside.
Method:
- Heat oil in a frypan; when it smokes, add cumin seeds, sputter for few seconds, add chopped onion and fry for couple of minutes on high flame.
- Add chopped potatoes; stir fry for 3-4 minutes on medium flame, add chopped gilki, continue to stir fry for couple of minutes.
- It is time to add Chilli Powder, Coriander powder, Turmeric Powder and Salt, cover the pan with lid. Gilki releases the water, continue to cook on lower flame for 8-10 minutes or until done.
- Add Garam masala powder, put off the flame.
- Now, “Gilki(Sponge Gourd) with Potatoes” is ready to serve.
- Tips: You may garnish this preparation with chopped fresh coriander leaves.Serve with fluffy Poori/ ghee smeared Chapti or Rice.
