Khoa seviyan

‘Eid-ul-fitr’ the festival started by Prophet Muhammad, celebrated at the end of month-long dawn to sunset fasting is a religious holiday of Muslims worldwide. On Eid day morning breakfast is very special with various types of desserts and sweets including variety of Seveiyan, “khoa seviyan” is one of them.  It is made of vermicelli, Khoa, dry fruits and dates.

Ingredient:

Preparation:

  1. Chop the dates, keep aside.
  2. Sliced dry coconut and almond, keep aside.
  3. Chop cashew nut and pistachio, keep aside.
  4. Soak saffron into milk, keep aside.
  5. Peel off three no. of cardamom and pound it. Keep aside.

Method:

  1. Take a fry pan, put 2 tablespoon of ghee in it; put one cardamom and two cloves, wait for few second, add seviyan; stir and fry on low flame till golden brown colour comes (about 5-6 minutes) keep aside.
  2. Take another pan; pour sugar as well as water in it, let the syrup boil for 3-4 minutes, add saffron and color in it, mix well.
  3. Put this syrup into the seviyan; lower the flame and cover it, stir occasionally.
  4. Cook till water is absorbed (12 to 15 minutes), add Khoa in it; stir continuously otherwise Khoa will stick in the bottom, add fresh cream, mix well and cover it.
  5. Stir in between, cook till seviyan is done (about 2 minutes), add remaining ghee.
  6. Add ¾quantity of dry fruits, cook for another couple of minutes.
  7. Add green cardamom powder and essence.
  8.  Khoa seviyan is ready to be put in serving bowl, decorate with remaining dry fruits and serve either warm or cold.
  9. You can store this for 2-3 days at normal temperature.
