“Mattar (pea) chop)” is a delicious North Indian snacks. It combines a crispy outer layer made from mashed potatoes with a flavourful stuffing of spiced peas. These fried delights are perfect for a tea-time snack or as an appetizer at gatherings.

Ingredients:
- Potato: 250gm
- Corn flour/bread slice: 20gm/1 no.
- Salt: 1 tea spoon label/as per taste
- Oil: for deep frying
Ingredients for stuffing:
- Peas: half cup
- Cumin: 1/4 teaspoon
- Fennel Seeds: 1/4 teaspoon
- Onion: one (small)
- Green chilli: 1no.
- Coriander leaves: 1 tablespoon (fine chopped)
- Oil: 1 tablespoon
- Black Salt: 2 pinch black
- black Pepper powder: half teaspoon
Preparation:
- Boil the potato, peel and mash; add salt and corn flour. Make dough.
For making stuffing:
- Heat oil in a fry pan; add cumin, funnel seed, sputter for few seconds.
- Add onion and green chilli; Stir fry on medium flame for a minute or until colour change.
- Add peas continue to fry on lower flame with cover on. (Stir occasionally).
- Fry until it is half done, (About 3- 4 minutes)
- Add salt, continue to cook until peas are done.
- Transfer the fillings into the bowl.
Method:
- Divide dough into 8-10 parts, make lemon size balls.
- Stuff with filling, Fold it and seal the edges by pleating.
- Fold the edges into the centre and joint properly.
- Make it round in shape.
- Heat oil till smoke is coming.
- Deep fry each ball till it gets golden brown.
- Tasty teatime snacks is ready to be serve with any chutney.
