Potatoes and cauliflower are comfort food in north India; everybody likes it, hardly anyone who doesn’t.
It is delicious dish; need not to stay longer in the kitchen, because we can cook this dish on low flame.
It goes perfect with Palak(spinach) Poori/Dost Paratha.
Ingredients:
- Cauliflower: 200 gm
- Potato: 2 no. (Medium)
- Onion: 1 no. (Medium)
- Tomato: 1 no. (Medium)
- Salt: 1 teaspoon
- Turmeric powder: ½ teaspoon
- Green chilli: 2 no.
- Garlic: 2 cloves
- Ginger: 2”piece
- Cumin seed: ½ teaspoon
- Bay leaf: 2 no.
- Cinnamon: 2” pieces
- Red chilli powder: ¼ teaspoon
- Coriander powder: ½ teaspoon
- Garam masala powder: half teaspoon
- Coriander leaves: 1 tablespoon (chopped)
- Mustard oil /cooking oil: 2-3 tablespoon
Preparation:
- Chop Cauliflower, Potato, Onion, Ginger, Green chilli, Garlic and Tomato into small pieces. Keep aside
Method:
- In a heavy bottom pan, heat oil; when oil start to smoke, add cumin, bay leaf and cinnamon, Sputter for few seconds.
- Add all chopped vegetables together; stir well, add, turmeric power, chilli powder, salt and coriander powder. Stir it.
- Reduce to low flame, Cover the lid; stir occasionally, so that it should not burn.
- Cover for 10-12 minutes or until vegetables are done.
- Add Garam masala powder and stir it, Put off the flame.
- Decorate with chopped coriander leaves.
- Potato, cauliflower (Aaloo gobhi) is ready to be served.
- Serve with Palak (Spinach) Poori or Steamed Rice and Dal.
