He liked pickle and believed pickles were a necessary part of food for the health of his troops.
Ingredients:
- Raw turmeric: 100 gm
- Ginger: 75-100 gm
- Salt: one and half teaspoon
- Yellow mustard: 2 tablespoon
- Fenugreek seed: 1 teaspoon
- Red chilli powder: 8-10 no.
- Mustard seed: half teaspoon
- Whole red chilli: 1 no.
- Asafoetida: 1 pinch
- Funnel seed: 1 teaspoon
- Kalonji (Onion seed): 1 pinch
- Mustard oil: 50 gm
- Lemon: 1 no.
Preparation:
- Scrap and discard skin of turmeric and ginger, diced into small pieces.
- Put these in to the sun or under fan for 20-30 minutes for drying to get rid of extra water.
- Grind yellow mustard seed, fenugreek seed and dry red chilli together, keep aside.
Method:
- Put oil in a fry pan it, when oil starts to smoke, put one pinch mustard seed, one dry red chilli broken in 3-4 pieces and asafoetida; sputter for few seconds, put off the flame.
- Add dry masala and mix it well; let it cool to room temperature.
- Take a mixing bowl; put dried ginger and turmeric pieces, pour this oil masala mixture on the ginger and turmeric pieces.
- Mix properly with the help of spoon.
- Now, raw turmeric and ginger pickle is ready.
- Store this pickle in a glass container.
- You can use this pickle for months.
