“Spinach Nuts Pasta – Inspired by Las Vegas Dining” is a wholesome and delicious dish that combines the goodness of fresh spinach with the rich crunch of nuts.
I first enjoyed this “Spinach Nuts Pasta” at a restaurant in Las Vegas with my family, and its rich yet comforting taste left a lasting impression on me.
The combination of creamy spinach and crunchy nuts was so unique and delicious that I immediately felt it was a recipe worth adding to my blog.
Back in my Indian kitchen, I tried recreating it with my own touch, and I am happy to say that I achieved almost the same authentic taste, bringing back those wonderful memories with every bite.
This recipe offers a beautiful balance of nutrition and taste, where the earthy flavour of spinach blends smoothly with the nutty texture, creating a satisfying and comforting meal.

Ingredients:
- Penne Pasta (Macaroni): 100 gm.
- Spinach: 100 gm.
- Onion: 1 no.(Medium)
- Tomato: 1 no. (Medium)
- Garlic: 3-4 clove
- Cashew Nut: 12-15 no.
- Walnut: 3-4 no.
- Cheese: 20-30 gm.
- Butter: 20 gm.
- Olive oil: 20 gm
- Salt: 1 teaspoon
- Black pepper powder: ½ teaspoon
- Chilli Flakes: 1/4 teaspoon
- Mixed Herbs: 1/2 teaspoon
- Lemon: 1 no.
Preparation:
- Blanch spinach, tomato and 10 no. of cashew nuts in salted water; take it out with the help of stainer, grind all with ice cubes, keep aside.
- Boil the pasta (macaroni) in same water for10 minutes (until 90% done), decant it and add 1 teaspoon of oil on pasta and mix well to prevent the stickiness, keep aside.
- Chop onion and garlic into fine pieces, keep aside.
- Chop left out cashew nut and walnut, keep aside.
Method:
- Take a fry pan; put oil and butter, fry onion and garlic on high flame for couple of minutes or till onion get translucent, add chopped nuts and stir fry for a minutes on low flame.
- Add prepared spinach paste and add water for required consistency; let it boil for couple of minutes on low flame (stirring continuously).
- Add boiled pasta; cook until it boils, add cheese, stir until cheese gets melted.
- Put off the flame; add chilli flakes, black pepper, mixed herbs and lemon juice, mix well.

- Transfer into serving bowl; decorate with grated cheese.
