This steel cut oats pulao is a fulfilling dish that have both taste and health, making it a perfect choice for family meals and gatherings.
Ingredients:
- Steel Cut Oats: 1 cup
- Onion:1 no. (Medium)
- Tomato: 1 no. (Medium)
- Carrot: 1 no. (Medium)
- Beans: 50 gm.
- Peas: 100 gm.
- Capsicum: 1 no. (Small)
- Green Chilli: 1-2 no.
- Bay leaf: 1 no.
- Cumin: half teaspoon.
- Salt: 1 teaspoon (as per taste)
- Hot water: 2 cups.
- Garam masala: (Clove: 3 no., Black pepper: 10-12 no., Star anise: 1 no., Mace: 2 inch piece, Black cardamom: 1 no., bay leaf: 1 no. and clove: 2-3 no.)
- Cashew Nuts: 15-20 no.
- Ghee (clarified Butter): 2-3 tablespoon
Preparation:
- Clean and wash steel cut oats. Keep aside.
- Chop onion, carrot, capsicum, tomato and beans (all finely) as shown in photo, keep aside.
- Cut green chilli into 2-3 pieces, keep aside.
Method:
- Heat ghee in a cooker; add Garam masala and bay leaf, allow sputtering for few seconds.
- Add cashew nuts; fry for couple of minutes on medium low flame.
- Add chopped beans; fry for 1 minute, add onion and carrot; fry on high flame for couple of minutes.
- Add peas, stir fry for a minute, add washed steel cut oats and green chilli, fry for 2-3 minutes.
- The moment some of the oats begin to change colour; add hot water and salt, close the lid and bring to full cooking pressure, put off the flame.
- Allow cooker to cool, open the lid; add lemon juice, stir Pulao lightly with the help of fork.
- Transfer Pulao in serving plate and decorate with fries cashew nuts. Mouth watering “Steel Cuts Oats Pulao” is ready to be served.
