Tapioca, also known as cassava or yuca, is a root vegetable that is cherished in many cuisines for its starchy, versatile nature. One of the delightful ways to prepare tapioca is by making a dish called “Tapioca Mashed Fry.” This dish involves mashing boiled tapioca and then frying.

Tapioca Mashed Fry is a simple yet delectable recipe; when we had been in Kudankulam neighbourhood of Kerala we often cook the recipe. our family enjoyed as a snack, side dish, or even a light meal. The starchy root is boiled, mashed, and then cooked with fresh coconut. This method infuses the dish with the rich texture of coconut, enhancing the natural sweetness of the tapioca. The combination of tapioca and coconut creates a flavourful, nutritious and delicious. dish.

In Kerala, South India, tapioca is a staple food that holds a special place in the culinary traditions of the region. One of the most beloved preparations is “Tapioca Mashed Fry,” is often served as a main course typically paired with fried fish.This combination is a staple in many households and beach restaurants too.

The use of locally sourced ingredients like tapioca and fresh fish underscores the deep connection to the land and sea, reflecting the essence of South Indian cuisine.

Ingredients:

  • Tapioca: 500 gm.
  • Mustard seed: half teaspoon
  • Salt: 1 teaspoon
  • Urad dal (split black gram): 1 tablespoon
  • Red chilli: 3-4 no.
  • Curry leaves: 8-10 leaves
  • Fresh coconut(scrapped): ¼ no.
  • Garlic: 3-4 flakes
  • Madras onion: 4-5 no.

Preparation:

  1. Peel out outer layer of tapioca with knife /peeler.
  2. Chop the tapioca roughly. Put it into the water.
  3. Boil tapioca along with double quantity of water and salt, either pressure cooker or microwave.
  4.  Mash it roughly. Keep aside.
  5. Chop onion, into small pieces. Keep aside.
  6. Peel off garlic, chops into two halves. Keep aside.

Method:

  1. Take a fry pan, Put oil in it, when smoke begins to come.
  2.  Add whole red chilli and garlic, wait for few seconds.
  3. Add mustard seed, split black gram, sputter it for few seconds.
  4. When light brown colour comes, add curry leaves, stir it.
  5. Add onion, cook till it becomes translucent.
  6. Add scraped  coconut, fry for couple of minutes.
  7. Add boiled and roughly mashed tapioca, fry for couple of minutes.
  8. Put off the flame. Transfer into serving bowl.
