In my version of gulgula, I mixed sesame seeds in dough and deep-fried them in ghee (clarified butter) which made the taste truly awesome.

The sesame seeds added a rich, nutty crunch, while frying in ghee gave the gulgula a beautiful aroma and traditional flavour.

Adding sesame seeds not only enhances the taste with a nutty flavour but also improves the nutritional value of gulgula.

Sesame provides warmth to the body, making this traditional sweet snacks more wholesome and perfect for cold winter days.

This combination made the winter snacks more indulgent, comforting, and full of warmth.

Gulgula is a traditional Indian sweet snacks that is especially popular in eastern and northern parts of India, including Bihar, Uttar Pradesh and Uttarakhand. In Bihari cuisine, gulgula has been part of food culture for generations and is also associated with festivals.

The origin of gulgula lies in rural home kitchens, where quick, energy-giving snacks were made using easily available ingredients.

It is made using simple ingredients like wheat flour, jaggery or sugar, fennel seeds and then deep-fried to golden perfection.

Ingredients

  • Wheat flour: 1 cup
  • Jaggery (grated): 1/2 cup
  • Banana: 1 no. (Small size)
  • Sesame Seed: 2 tablespoon.
  • Fennel seeds: 1 teaspoon.
  • Cardamom powder: 1/2 teaspoon
  • Baking soda: 1/4 teaspoon.
  • Water: as required
  • Ghee (clarified butter): for deep frying

Preparation:

  1. To prepare batter; mash banana properly along with jagerry with the help of hand blender/ grinder.
  2. Add 1/2 cup of water blend for a minute; add wheat flour, continue to blend for a minute.
  3. Take out in a mixing bowl; add sesame seed, fennel seed, cardamom powder and baking soda, mix well, batter is ready, keep aside for 30-40 minutes.

Method:

  1. Take a heavy bottom fry pan. Pour sufficient ghee in it.
  2. Heat the Ghee on medium flame, after four to six minutes when it is hot put a drop of batter. The batter should come up after few seconds, if does not, means temperature is low, allow further heating and check proper temperature by putting a drop of batter.
  3. Pour small quantity of batter one by one into the hot ghee by spoon or hand as per quantity of ghee and size of the pan.
  4. Deep fry on medium flame for 2-3 minutes or until golden brown colour appears.
  5. You may get 8-10 gulgula in one go, similarly deep fry until batter finishes.
  6. Take out on kitchen towel. “Winter Special Sesame Gulgula (Goolgoola)”   is ready to be served with tea.
  7. Note: You can cook this recipe in Appam pan/ paniyaram pan too.
