“Stuffed Capsicum”, also known as “Bharwa Shimla Mirch”, is a delicious and versatile dish that is enjoyed across various regions of India. This dish features bell peppers (capsicums) that are hollowed out and filled with a flavourful mixture, typically made from spiced potatoes, paneer, or a combination of vegetables as stuffed with peas and paneer, stuffed with mixed vegetables.

The stuffed capsicums are then cooked until tender, either by baking, grilling, or pan-frying, The capsicum’s natural sweetness pairs perfectly with the savory stuffing, creating a dish that is both visually appealing and satisfying to eat.

Today’s recipe “Stuffed with Potatoes” is often served as a main course or a side dish and goes well with Roti, Paratha, or even  Steamed Rice.

Its versatility allows for endless variations, making it a favorite in Indian kitchens for special occasions as well as everyday meals, is good for digestive system, good for hair, skin and eyes.
It lowers the cholesterol levels and triglycerides too; it strengthens the immune system.

Ingredients:

Preparation:

  1. Take capsicum, discard stem and cut into longitudinally into two halves; apply oil all around this (both inside and outside) and keep aside.
  2. Boil and mash potatoes, keep aside.
  3. Chop garlic, green chilli and ginger into very small pieces, keep aside.

Method:

To prepare stuffing:

  1. Take fry pan, put oil and heat, when it smokes add cumin seeds; add onion, garlic, green chilli and ginger in it. Stir fry  for couple of minutes (keep it stirring otherwise it may burn).
  2. Add mashed potato and fry (About 3 to 5 minutes); add chilli powder, coriander powder, turmeric powder, jaljeera powder and salt continue to fry  for couple of minutes on lower flame.
  3. Now stuffing is ready.

To prepare stuffed capsicum:

  1. Take capsicum and stuff fully with stuffing.
  2. Arrange these into OTG tray/fry pan until it is ready(about 3-4 minutes).
