I prepared this “Kaju- Nariyal Chutney (Cashew Nut- Fresh Coconut Dip)” as a phalahari option to serve with crispy Rajgira (Amaranth) Kachori.

Since fasting foods need to be light yet nourishing, this chutney works perfectly with the nutty flavour of rajgira.

The natural richness of cashew nuts and coconut gives enough energy during vrat (fasting), while its mild taste balances the crisp texture of the kachori.

This combination is simple, sattavik, and satisfying, making it an ideal accompaniment for fasting days as well as special religious occasions.

“Kaju- Nariyal Chutney (Cashew Nut- Fresh Coconut Dip)” is a rich, creamy, and mildly sweet accompaniment that adds a special touch to any Indian meal.

Made with the goodness of cashew nuts and fresh coconut, this chutney has a smooth texture and a delicate balance of flavours.

It pairs beautifully with Dosa, Idli, Vada, Upma, or even with simple Chapati. Easy to prepare and full of nutrition, Kaju Nariyal Chutney is perfect when you want something different from regular coconut chutney but still traditional at heart.

Ingredients:

  • Fresh Coconut:  1/2 cup (grated/scrapped)
  • Roasted Cashew Nut: 10-12 no.
  • Green chilli: 1 no. as per taste.
  • Salt: 1/2 teaspoon
  • Sugar: 1/4 teaspoon (optional)

For Seasoning:

  • Sesame Oil/ Cooking Oil: 2 tablespoon
  • Mustard Seed: 1/2 teaspoon
  • Cumin: 1/2 teaspoon
  • Curry Leaves: 1 twig
  • Asafoetida: 1/4 teaspoon
  • Dry Red chilli: 1 no.

Preparation:

  1. Take scraped coconut, cashew Nut, green chilli, salt and sugar into grinding jar.
  2. Grind well as chutney with help of water.
  3. Transfer into serving bowl; Kaju- Nariyal Chutney (Cashew Nut- Fresh Coconut Dip)  is ready.

Seasoning:

  1.  Heat oil in a small wok; add mustard seed and cumin, sputter for few seconds.
  2. Add red chilli, stir fry until gets brown in colour;  add curry leaves, continue to fry for 30 seconds.
  3. Put off the flame; add asafoetida, wait for a bit.
  4. Add this prepared seasoning into the prepared chutney.
  5. Yummy  “Kaju- Nariyal Chutney (Cashew Nut- Fresh Coconut Dip)” is ready to be served.

Note: I often use this chutney in breakfast with Idli too.
