It takes me down the memory lane when my sons were kid, they were so much fond of this lassi in summer season that they would take out the ice and curd, put them in a pot and start churning them with their tiny hand, forcing me to take over and make the malaidar sweet lassi. In my mother’s house the old wooden hand churner is still in use.
“Malaidar sweet lassi (sweet yogurt drink)” is a creamy and indulgent yogurt-based drink, famous for its thick texture and rich layer of malai (cream) on top. Prepared with fresh curd, sugar, and often flavoured with cardamom or rose water, this lassi is both refreshing and filling.
The addition of malai gives it a velvety smoothness and a touch of royal indulgence, making it a perfect treat during hot summer afternoons.
Served chilled in tall glasses, malai lassi is not just a drink but a wholesome in itself, carrying the essence of traditional Indian hospitality and festive cheer.
This is very good for summer season, thadha thandha, cool cool, very good for school going children or office going adult.
Ingredients:
- Curd: 2 cups
- Milk: 1 cup.
- Sugar/honey: ½ cup
- Kewada essence: ½ teaspoon (optional)
- Rose essence: ¼ teaspoon (optional)
- Malai (fresh cream): ½ cup
- Almond sliced: 1 tablespoon
- Pistachios sliced: 1 tablespoon
- Green cardamom: 3-4 no.
- Ice cubes: few
Preparation:
- Chop almond and pistachios into small slices. Keep aside.
- Pound green cardamom, keep aside.
Method:
- Take an earthen pot preferably, put curd, milk and sugar; churn it with blender on full speed till it becomes smooth and frothy.
- Add both essence and cardamom powder churn for a while, add ice cubes and churn again for a while, smooth and doubled frothy lassi is ready.
- Healthy sweet lassi is liked by everyone, while serving in tumbler garnish with a hip spoon of malai, sliced almond and pistachio.
