Kulfi-Falooda is a royal Indian dessert that beautifully combines the richness of traditional kulfi with the colourful layers of falooda. Thick, creamy kulfi made from slow-cooked milk is paired with silky falooda noodles, rose syrup and sabja (basil) seeds, creating a dessert that is as vibrant as it is flavourful.
Often served in tall glasses or as a plated treat, kulfi-falooda is a feast for the senses; cool, refreshing, and indulgent. Popular during festivals, weddings, and special celebrations, this dessert brings together textures and tastes in every spoonful, making it an all-time favorite for both kids and adults.
Containing milk and dry fruits, gives you burst of energy. You feel zest with every bite.
Ingredients:
- Kulfi: 400-500 gm
- Sabja seed (basil seed): 1 teaspoon
- Sliced pistachio: 3 tablespoon
- Sliced cashew nut: 3 tablespoon
- Rose syrup: 6-7 tablespoon
- Fresh fruit (pomegranate, apple, and mango): optional
- Faluda sev: 1 bowl
For making Faluda sev:
- Corn flour: 1 cup
- Water: 2½ cup
- Ice: 1 tray
- Water: 1 glass
Preparation:
- Soak sabja seed into one cup of water for 30-40 minutes, keep aside.
- Mix corn flour and water solution, mix properly so that lumps doesn’t form.
Method:
- Cook this solution on medium lower flame for about 3-4 minutes or until it become translucent and thick dough consistency like photo, fill this hot dough into sev maker with spoon.
- Operate the sev maker, and allow the prepared sev to fall in a bowl filled with ice and water, keep this sev in cold iced water for 10-12 minutes.
- Now faluda is ready to use.
Arranging the kulfi – faluda:
- Take quarter plate, pour rose syrup and prepared sabja seed, add kesar-pista kulfi topped with faluda and rose syrup. Decorate with dry fruits slices and fresh fruits.
- Now, yummy Kulfi –faluda is ready to serve, you can serve this into glass/ice cream bowl as per your wish.
