Palak (spinach) corn curry

Prepare tasteful and  excellent recipe at home for everyday life as well as party and perfect for prepare sandwiches too; corn is an all time favorite vegetables; very good source of vitamin and many more nutrients.

Spinach (palak) is the greatest of all green vegetables; the power house of many more nutrients, good source of phosphorus, manganese, niacin and vitamin B6.

Ingredients:

Preparation:

  1. Blanch/Boil / microwave palak (spinach) with sugar for 3 minutes and make fine paste.
  2. Grind the onion, 1 tomato, ginger and garlic all together.
  3. The corn should be boiled/micro waved/blanched

Method:

  1. Take a pan. Put oil in a pan, when smoke starts coming, add cumin seed and bay leaf; sputter for few seconds, add grind  onion, tomato, garlic and ginger paste.
  2.  Fry these masala about 3-4 minutes on medium flame; add red chili powder, palak paste and ¼ teaspoon salt. Put half cup water, Just boil it.
  3. Add boiled corn; continue to boil for a minute; add Garam masala powder.
  4.  Remove it in serving bowl; serve hot, this makes excellent side dish.
  5. garnish with butter and red chilly (optional).
  6. Palak corn is ready to serve. you can also prepare sandwiches from this.
