“Ridge Gourd Dry”, also known as Turai or Luffa Stir Fry, is a simple yet flavourful Indian dish made with tender ridge gourd cooked in minimal spices.
Light, nutritious, and easy to digest, this sabji is a staple in many Indian households. It beautifully absorbs the flavours of spices while retaining its soft, juicy texture.
Perfect for everyday meals, ridge gourd dry sabji pairs wonderfully with Roti, Dost Paratha, or Steamed Rice, offering both taste and health in every bite.
Traditionally Ridge gourd is used in the treatment of jaundice and other liver related problem. It is best, eaten when it is tender and green. It has high moisture content and dietary fiber.
Ingredients:
- Ridge gourd: 250-300 gm
- Potato: 2 no. (Medium size)
- Onion: 1 no. (Medium size)
- Garlic: 3-4 flacks
- Mustard oil /cooking oil: 3 tablespoon
- Red chilli: 2 no.
- Cumin: half teaspoon
- Salt: one teaspoon
- Turmeric powder: half teaspoon
- Coriander powder: 1 teaspoon
- Chilli powder: half teaspoon
- Coriander leaves: 2 tablespoon (chopped)
Preparation:
- Slightly peel off the edges of ridge gourd, not peel fully. Cut longitudinally ~3” pieces. Keep aside.
- Peel off and cut potato longitudinally and thin.
- Peel off onion and chop longitudinally and thin. Keep aside.
- Chop garlic longitudinally and thin. Keep aside.
Method:
- Take fry pan, put one tablespoon of oil, heat, and when it smokes add cumin and red chili.
- Allow it sputter for few seconds. Add onion and Stir it fry on high flame for couple of minutes or until onion becomes light brown in colour. (Keep stirring otherwise it may burn).
- Add garlic; continue to fry on medium flame for a minute take out fried onion and garlic. Keep aside.
- Again put 2 tablespoon of oil, heat, and when it smokes; add ridge gourd and potato, Stir fry; lower the flame, continue to fry with lid on until potato is half done(about 7-8 minutes).
- Now put the chilli powder, coriander powder, turmeric powder and salt; again cover stir occasionally until vegetables are done(about 4-5 minutes).
- Add fried onion and garlic, stir it and cover for couple of minutes.
- Add coriander leaves, put off the flame.
- Ridge gourd dry is ready for serving as a side dish with any meal.
