One of my Andhra friends/neighbour prepared this “Sabudana Halwa (Tapioca Pearl Dessert)” and it was truly awesome in taste.
The texture was perfectly soft, the sweetness was well balanced, and the generous use of ghee and dry fruits made it rich and comforting. That first bite itself made it memorable, and it inspired me to prepare this halwa at home.
“Sabudana Halwa” is a classic and comforting Phalahari sweets that is often prepared during fasting days and special religious occasions.
Made with soaked sabudana, ghee, and natural sweeteners like jeggery, this halwa has a soft, glossy texture and a gentle sweetness. The addition of dry fruits enhances both its taste and nutritional value, making it an instant source of energy.
It is a simple phalahari sweets, yet when made with love and experience, it turns out absolutely delightful.
Ingredients:
- Sabudana (Tapioca Pearl): 1 bowl
- Jaggery: 2 bowl
- Cashew Nuts: 1/2 cup
- Ghee (Clarified Butter): 3/4 cup
Preparation:
- Clean and soak sabudana in water for 6-7 hours or overnight, keep aside.
- Drain water, blend sabudana along with little quantity of water until fine paste, keep aside.
- Chop cashew nut into 3-4 pieces, keep aside.
- Melt ghee in a vessel, keep aside.
- Smash the jaggery, keep aside.
Method:
- Prepare the jaggery syrup along with 1/2 cup of water, boil until it get thick like honey.
- Add sabudana paste; mix it well on low flame, continue to cook for couple of minutes.
- Simultaneously keep ready hot ghee; add ghee in small quantity in batches, stir well, when ghee gets blended, continue the process until all ghee added.
- When ghee will start coming out of the mixture; it is time to add cashew nuts.
- Continue to cook on low flame for couple of minutes.
- “Sabudana Halwa (Tapioca Pearl Dessert)” is ready to be served.
