Chatela (spiny Gourd) Maharashtrian Recipe

The atmosphere was so calm and peaceful with lots of greeneries surroundings after rain; the vegetable market flooded with “Chatela (spiny Gourd)”. It is known as Kakora in UP and Bihar, in Maharashtra it is called Kartoli (in English Momordica dioica). Even now rainy season is still in Mumbai. I like to use seasonal vegetables and fruits in our meal to fight against seasonal flu and illness. I  have already prepared and uploaded “Chatela (Spiny Gourd Masala/ Curry) and today’s recipe is Maharashtrian style recipe of Kartoli.

The recipe is typically stir fry, which is not just healthy but low in calories too for lunch or dinner, just a teaspoon sesame seed in seasoning enhance the flavour of Kantola/ Chatela.

Ingredients:

  • Chetela: 300 gm
  • Onion: 1 no.
  • Curry leaves: 1 twig
  • Green Chilli: 1 no.
  • Garlic: 4-5 cloves.
  • Fresh scrapped coconut: 2-3 tablespoon
  • Mustard Oil/ Cooking oil: 2 tablespoon
  • Turmeric powder: ½ teaspoon
  • Coriander powder: 1 teaspoon
  • Chilli powder: 1 teaspoon
  •  Salt: 1 teaspoon (as per taste)
  • Cumin: ½ teaspoon
  • Sesame seed: 1 teaspoon.
  • Mustard seed: ½ teaspoon

Preparation:

  1. Discard both sides, slice the kartoli, keep aside.
  2. Chop the Onion, Chilli, Garlic, Keep aside.
  3. Scrap Coconut, keep aside.

Method:

  1. Take a heavy bottom pan. Heat oil, add Cumin, Mustard Seed and Sesame seed, sputter for few seconds; add green chilli, garlic and curry leaves, just give a mix. Add chopped onion stir fry for couple of minutes on high flame till onion get translucent.
  2. Add Chatela continue to fry on medium flame, cover for few minutes (~3-4 minutes).
  3. Add salt, coriander powder, turmeric powder and chilli powder; continue to fry for couple of minutes.
  4. Add scrapped fresh coconut; stir fry for couple of minutes on medium low flame or until done, now “Chatela (spiny Gourd) Maharashtrian Recipe” is ready to  be served.
  5. Note: heavy bottom pan works better. This is served with rice or paratha.
