Ingredients:
- Arabi (taro root): 250gm.
- Onion: 1 in number. (Medium)
- chili powder: 1teaspoon
- Turmeric powder: 1 teaspoon
- Coriander powder: 1 teaspoon
- Mango powder: half teaspoon (optional)
- Garam masala powder: half teaspoon
- Ginger: 1teaspoon (paste)
- Garlic: 1teaspoon (paste)
- Ajawine: half teaspoon
- Salt: 2 teaspoon
- Mustard oil/any cooking oil: 4 tablespoon
- Water: 1 cup
Preparation:
- Chop onion. Keep aside.
- Scrape arabi using a knife and cut into small cubes.
Method:
- Take fry pan, put oil, when it smokes add ajawine.
- Add chopped onion and fry till color becomes golden brown. (About 2-3 minutes)
- Add garlic and ginger paste in it. Stir it and fry (keep it stirring otherwise it may burn).
- Now put arabi and stair it. Cover the fry pan. Lower the flame.
- Cook on minimum flame until arabi become soft.
- Now in a bowl put the chili powder, coriander powder, turmeric powder and salt, add one tablespoon of water and mix it well, till it becomes paste.
- Add this paste in the fried arabi till it starts releasing oil.
- Add one cup of hot water, mix this and cover it, when it comes to boiling lower the flame, cook till arabi is done.
- Add mango powder too.
- Let it cook for desired constancy.
- Add Garam masala powder, put off the flame.
now,arabi curry masala is ready to serve.
